Who doesn't love making cereal into a dessert? National Cereal Day means you can make this sweet dessert to celebrate!
Ingredients
½ C. brown sugar
½ C. light corn syrup
½ C. creamy peanut butter
2½ T. butterscotch baking chips
3 C. Rice Krispies cereal
3 squares chocolate almond bark
¾ C. semi-sweet or milk chocolate chips
Directions
1. Spray a 9 x 9" baking pan with nonstick cooking spray; set aside.
2. In a medium saucepan over medium heat, stir together brown sugar, corn syrup and peanut butter until mixture is hot and brown sugar is dissolved. Remove from heat; add butterscotch chips, stirring until melted and smooth. Stir in cereal until well coated. Transfer mixture to prepared baking pan, pressing firmly in an even layer. Refrigerate for 20 minutes or until set.
3. In the top of a double boiler over medium heat, melt together chocolate almond bark and chocolate chips, stirring occasionally until blended and smooth. Remove from heat.
4. With a sharp knife, cut chilled cereal mixture into bars. Coat each bar in melted chocolate and transfer to a foil-lined baking sheet. Set aside until firm.
