Ingredients
1 tsp. baking powder
¼ tsp. salt
Flour
½ tsp. ground allspice
2½ T. sugar
2 eggs
¾ C. shredded carrots
½ C. milk
½ C. plain yogurt, plus more for serving
⅓ C. golden raisins
Vegetable oil
Honey or maple syrup for serving
Directions
Put the baking powder and salt in a ¾-cup measuring cup; fill with flour and dump into a bowl.* Add the allspice, sugar, eggs, carrots, milk, and ½ cup yogurt. Grab a spoon and stir to combine, then stir in the raisins.
Heat a griddle or skillet on a rack over a medium cooking fire (not too hot - you want these yummy 'cakes to cook all the way through without burning) and add a little oil. Use a ½-cup measuring cup to pour batter into a the hot oil and to spread the batter out slightly. Flip the 'cakes once the bottoms are golden brown, then cook until the other sides are golden.
Serve 'em up with honey or syrup and a dollup of yogurt. Makes about 6 pancakes.
*You can replace these three ingredients with 1 C. self-rising flour.
