This salad recipe from our Loaded Salads cookbook is packed with the flavors of summer. Top it off with homemade Bacon-Poppyseed Dressing and you have a deliciously healthy meal.
To make Bacon-Poppyseed Dressing, cook 4 bacon strips in a skillet over medium heat until crisp; drain on paper towels. Discard the drippings and crumble the bacon into a small bowl. Add 1/2 C. mayonnaise, 2 T. each sugar and white vinegar, and 1/2 tsp. poppyseed to the bowl and whisk well. Season with salt and black pepper.
Place 6 to 8 C. chopped baby spinach or kale (stems removed) into a big bowl and add 2 C. sliced fresh strawberries and 1 peeled and sliced avocado. Toss the salad mixture with the prepped dressing before serving.
