Ingredients
6 strips bacon, chopped
3 C. frozen corn, thawed
½ C. diced onion
¼ C. diced red bell pepper
1 jalapeño, seeded & diced
4 oz. cream cheese, cubed
¼ C. sour cream
2 green onions, thinly sliced
1 tsp. sugar
¼ tsp. salt
½ tsp. black pepper
Directions
Cook bacon until brown and crispy, about 6 to 8 minutes. Transfer to a paper towel-lined plate to cool and drain the excess grease.
In a large mixing bowl, combine bacon, corn, onion, bell pepper, jalapeño, cream cheese, sour cream, green onions, sugar, salt, and black pepper. Refrigerate for at least 1 hour before serving to allow the flavors to develop. Serve with crackers or tortilla chips.
