Blackened Salmon with Mango Salsa

Cooking for two made easy!

This recipe is perfectly portioned for just two servings. It's the perfect weeknight dinner for two. Better yet, no more scrubbing a bunch of pots and pans - you can make this recipe in just one skillet! Two servings. All in one skillet. Absolutely delicious. 

This Blackened Salmon with Mango Salsa is packed with flavor! It'll soon become your go-to meal for a quick weeknight dinner. 


  • 1 ripe mango, peeled, seeded & chopped
  • 1/4 C. diced red bell pepper
  • 2 T. chopped red onion
  • 1 T. finely diced jalapeno pepper
  • 2 T. chopped fresh cilantro 
  • 1/2 tsp. minced garlic
  • 2 T. lime juice
  • Salt & black pepper to taste
  • 1 1/2 tsp. smoked paprika
  • 3/4 tsp. each dried oregano & thyme
  • 1/4 tsp. each cayenne pepper & white pepper
  • 1/8 tsp. each onion powder & garlic powder
  • 1/4 tsp. salt
  • 1/2 tsp. sugar
  • 2 T. vegetable oil
  • 2 (5 oz.) salmon fillets 


For the mango salsa, stir together the mango, bell pepper, onion, jalapeno, cilantro, garlic, lime juice, salt, and black pepper. Refrigerate until serving time.

Mix the paprika, oregano, thyme, cayenne, white pepper, onion powder, garlic powder, sea salt, and sugar and press the seasoning mixture onto both sides of the salmon to adhere. 

Heat the oil in a skillet over medium-high heat and ever-so carefully set the salmon into the hot oil. Cover and fry a few minutes on each side, until cooked the way you like it. Serve with the chilled salsa.
